Cantaloupe Jello

½ cup purred cantaloupe flesh
½ cup water
½ tablespoon sugar
1 teaspoon agar agar
2 slices pineapple (optional)

Find two jello mold or small cups, place one pineapple slice in each.

Mix cantaloupe, water, sugar and agar agar. Pour into a small pot and simmer for 3 to 5 minutes.

Pour into jello molds and let cool. Refrigerate until set.

Remove from jello molds and serve.

Walnut Chocolate Rice Cookies

So easy, so tasty.

½ cup rice flour

½ teaspoon baking powder

1 tablespoon cacao powder

¼ cup chopped walnut

2 tablespoon butter, melt

2 tablespoon brown sugar

1 egg, beaten

Preheat oven to 375 F degrees.

Mix flour, baking powder, cacao powder and walnut.

Beat butter and sugar, mix in egg.

Fold wet ingredients into dry ingredients.

Shape into cookies, put on baking sheet 2 inches apart.

Bake 7-10 minutes.
