1 cup cooked sweet peas
Salt to taste
¼ cup potato starch
1 tbsp. olive oil
¼ cup finely chopped onion
2 tablespoons finely chopped tomato
1/2 teaspoon cumin
1/2 teaspoon paprika
Black pepper to taste
Puree the peas, then combine peas, salt to taste and potato starch. Set aside.
In a small skillet over low heat, heat the oil and add the onion, sautéing until soft. Add the tomato, cumin, paprika and black pepper. Stir and cook about 2 minutes.
Remove from the heat and immediately stir in the pea mixture. Add more potato starch if too wet.
Form the pea mixture into balls and place on a slightly oiled baking dish.
Bake for about 5 minutes at 350 degrees Fahrenheit.
