Garlic and Thyme Pumpkin Soup

Garlic and Thyme Pumpkin Soup

Garlic and Thyme give the soup unbeatable aroma.

1 tablespoon olive oil

4 garlic cloves, chopped.

¼ onion, chopped.

1 cup cooked pumpkin flesh

1 teaspoon dried thyme

2 cup vegetable broth

Salt and pepper to taste

Heat olive oil in a pan. Sauté garlic and onion until fragrant.

Add pumpkin, thyme and broth, bring to a boil then simmer for 10 minutes.

Let the soup cool a little, then blend in a blender until smooth.

Pour soup back into the pot, reheat and season with salt and pepper.
