Vegan Sticky Rice Pudding

1 cup water

½ cup cooked sticky rice

¾ cup coconut milk

¼ cup brown sugar

Combine water and rice, set aside to soak for at least 4 hours or overnight.

When ready to cook, transfer rice and soaking water to a pot with lid.

Bring to a boil over medium heat, then reduce heat to low and simmer until rice is tender, about 30 minutes.

In a saucepan, combine coconut milk and brown sugar. Bring to almost boiling point over medium heat and cook, stirring, until sugar dissolved.

Stir in cooked rice and cook stirring, until thickened, about 10 minutes.

Transfer to individual serving bowls and let set, or chill if desired.
