Baked Okra with Miso

A little crispy on the outside and tender inside, this okra dish makes a great appetizer or side dish.

20 okra

½ cup bread crumb

1/8 teaspoon ground black pepper

1/8 teaspoon paprika

2 teaspoon miso paste

Preheat oven to 350 degrees Fahrenheit.

Mix bread crumb, ground black pepper and paprika.

Put okras into boiling water and cook for 2 to 3 minutes. Drain and let cool.

Trim off the tough end of the okras, then cut into halves.

Using finger or knife, spread some miso paste on each half of okra, on the cut side.

Roll the okra halves in the bread crumb mixture, then spread on a baking sheet.
Bake 10 to 15 minutes.
