Woodear Mushroom Salad

Woodear (木耳) is a kind of Chinese mushroom that when cooked looks a bit like jelly. It is used in soup, sautéed dishes and in salad. Here is a simple woodear mushroom salad. You can experiment with other kinds of mushroom too.

3 cups woodear mushroom, recovered from dry.

1 tablespoon grated celery

1 tablespoon white sesame

½ tablespoon hot chili oil

1½ tablespoon soy sauce

½ tablespoon Balsamic vinegar

1 tablespoon sugar

½ teaspoon ground Szechuan pepper

1 teaspoon grated ginger

½ teaspoon sesame oil

Mix hot chili oil, soy sauce, Balsamic vinegar, sugar, ground Szechuan pepper, grated ginger, and sesame oil. Add water or soy sauce to adjust taste.

Boil a pot of water, cook woodear mushroom for 3 to 5 minutes. Drain and let cool.

Put woodear mushroom in a bowl. Pour sauce over。 Top with celery and sprinkle with sesame.

Serve at room temperature or refrigerate.
