Brown Rice Sushi with Avocado, Beet, Corn and Walnut Cheese

Brown Rice Sushi

2 cups brown rice, cooked

½ cup corn, cooked.

½ cup chopped beet, cooked.

1 avocado

¼ cup chopped walnut

3 tablespoon water

¼ teaspoon salt

3 nori sheet

To make walnut cheese, mix walnut, water and salt in a blender.

Peel and remove core of avocado. Cut the flesh into small chunks.

Place a nori sheet on a bamboo sushi mat.

Spread rice on the nori, leaving at least half inch space from the edge.

Then, there are two ways to do this. You can mix corn, beet, avocado and walnut sauce, then spread the mixture on the rice, or put the ingredients one by one, starting with walnut cheese, avocado, beet, then corn (sticker ones first). The second way make the sushi’s cross-cut look prettier. The first way is a shortcut.

Stick few grains to the edge of the nori.

Roll up the mat.  Hold the roll inside the mat tightly, for few seconds. Open slowly to prevent content from falling out in case the edge is not secured. If the edge is not secured, add a little more water or rice grains and press again.

Put roll on a cutting board, and cut into segments.
