Vegan Chocolate Pudding with Raspberry

½ pound silken tofu

¼ cup unsweetened cacao powder

1 tablespoon or more confectioner’s sugar

2 raspberries

Use a blender to mix tofu, cocoa powder and sugar. Taste it and adjust the amount of ingredients to achieve desired sweetness and texture.

Pout tofu mixture into two pudding cups, and place a raspberry on top of each pudding.

Enjoy immediately or refrigerate.

Note: You can use other kinds of sugar; confectioner’s sugar just makes it silky and easy to blend.
